  • 1,5 kg pork shoulder bone-in, cut into chunks
  • 1 onion diced
  • 1 clove of garlic minced
  • 1 cup of BBQ sauce
  • 1 cup of water
  • Olive oil as needed

Spice rub:

  • Garlic powder as needed
  • Onion powder as needed
  • Smoked paprika as needed
  • Ground cummin as needed
  • Salt & pepper to taste

  • Season the pork with the spice rub.
  • Add olive oil to the pressure cooker and brown each piece of meat on all sides.
  • Set aside to rest.
  • Add the onion and garlic to the juices in the pan and let it brown slightly.
  • Add the meat, BBQ sauce and water.
  • Mix well. The meat won't be covered by liquid which is ok.
  • Close the lid and take to high heat on position 2 (medium).
  • Let the pressure build and move to the lowest heat possible.
  • Cook for 1 hour.
  • When the time is up, remove from the heat and follow the natural release method.
  • Open and remove the meat to a tray. Cover it with foil and let it rest for 5-10 mins.
  • Shred the meat with the help of 2 forks.
  • Add some of the leftover juices from the pressure cooker and mix well.
  • You may also place the tray of meat under the broiler for a more roasted flavour.
