bone-in, cut into chunks

Season the pork with the spice rub.
Add olive oil to the pressure cooker and brown each piece of meat on all sides.
Set aside to rest.
Add the onion and garlic to the juices in the pan and let it brown slightly.
Add the meat, BBQ sauce and water.
Mix well. The meat won't be covered by liquid which is ok.
Close the lid and take to high heat on position 2 (medium).
Let the pressure build and move to the lowest heat possible.
Cook for 1 hour.
When the time is up, remove from the heat and follow the natural release method.
Open and remove the meat to a tray. Cover it with foil and let it rest for 5-10 mins.
Shred the meat with the help of 2 forks.
Add some of the leftover juices from the pressure cooker and mix well.
You may also place the tray of meat under the broiler for a more roasted flavour.
