Being a fish lover I’m finding it hard to enjoy it as much as I would like to. First reason: the local fish shop is not exactly easy walking distance from work so I end up at the butchers almost everyday. Second reason: the boyfriend is not so comfortable eating fish because of the bones so he prefers fillets. I know I could stock up the fridge with fish which I do. But when it’s finished it does take a bit till it gets refilled. Meat ends up being an easier option as I have a supermarket just outside work and a really good butcher 2 mins from home.
So this time I took advantage of my holidays and went for a little walk to the fish mongers. Among other things like prawns, squid and awrata, I bought 2 really nice salmon fillets. It’s a good option because there’s a very small number of bones in it and it’s full of flavour. So the boyfriend should be happy 🙂
My plan was to cook in the oven but I’m always afraid of letting it dry. So I decided to go for the safest option: bake them in foil. It’s easy enough and the foil keeps the fish moist. Most of the times, I add only onion and fresh herbs. But this time I had some peppers and tomatoes in the fridge so I decided to add them to the recipe. The dill potatoes have always been a hit with my friends and the boyfriend also likes them. Dill goes very well with potatoes. I try to cook the potatoes very well so that when I mix the butter and dill they get a bit smashed. It makes them tasty and rustic. And the combination of the salmon and my favourite potatoes was an absolute success 🙂
