This is something that took me a while to get right… I didn’t use to eat asparagus at home so I never learned how to prepare asparagus… when I discovered how much I like it, then the trouble started. It’s not as easy as it seams. It’s actually easier to get it overcooked then just right. So this is the way that works better for me. Not sure if it’s the right one and I would love to hear from you with tips to help me 🙂
How to prepare asparagus

- Start by washing the asparagus very well.
- Hold the asparagus and bend it until it breaks. Discard the base that is released. This is the part of the asparagus which is thicker and fibrous and is not good to eat
- With a potato peeler, carefully remove the skin from the bottom of asparagus, do not touch the tip top. Do this with all the asparagus.
- Cook them in boiling water seasoned with salt, about 5 minutes or until cooked (but not too much).
- I usually choose a asparagus, and to make sure that is cooked, I take it and cut a piece of the base, and taste. If it's still fibrous, I put it back in the pot.
- As soon as they are cooked, remove with a slotted spoon and pour in a bowl with cold water and ice cubes to stop the cooking.
- And the asparagus are ready to use in your recipes
