Because I really want to be able to speak with all of you everyday (or almost everyday, at least!) and I’m not managing… at all!!! And this is making me feel really bad. You think you can forgive me? I’m no super chef so it’s not like you need me to teach you anything. But I really enjoy being able to show you what I do in my kitchen. And I also love to write and take photos. bangers and mash with guinness onion gravy
So let me get back to this beautiful recipe π It is totally dedicated to my colleague Mary, my favourite Irish lady π She was off work for the last month recovering from a surgery and I couldn’t help but thinking of her on St Patrick’s Day… Every time there’s some sort of special celebration I try to cook something to match it. Usually on St Patrick’s Day I cook lamb, more precisely Shepperd’s pie. But this year I wanted to be different. I’ve been told that corned beef and cabbage is quite a traditional Irish dish. Well, I don’t like cabbage so that was out of question. Next on the list was dishes with Guinness and I loved the idea. Recently I found Cumberland sausages at my local butcher so the idea of bangers and mash and Guinness onion gravy was my favorite. And voila! Enjoy π
Bangers and mash with guinness onion gravy
Ingredients
- 6 Cumberland sausages, or any other sausage of your choice
- 1/4 cup Guinness beer
- Olive oil, as needed
Gravy:
- 1 tbsp butter
- 1 onion, sliced
- 1/2 cup Guinness beer
- 1 cube of beef stock
- 1 tbsp Worcestershire sauce
- 1 1/2 tsp cornstarch
- 1/4 cup of water
Instructions
- Place the sausages in a large frying pan over medium heat. Pour 1/4 cup of Guinness into the pan and drizzle with olive oil.
- Cover, leaving the lid slightly ajar. Cook until the beer evaporates and the sausages are brown and crispy.
For the gravy:
- Melt the butter in a frying pan over medium high heat.
- Add the onion and cook until soften.
- Pour in the beer, scrape the bottom of the pan and let it reduce for 1 min.
- Then add the beef stock and Worcestershire sauce.
- Mix the cornstarch and water together and pour into the pan.
- Cook over medium high heat until reduced and thick.
Mash:
- I used ready made mash and I prepare it according to the package instructions.
- Place the mash on the plate, top with the bangers and pour the gravy over it
