I was in the mood for fish… but I wanted something different! Quick look at the ingredients available in the kitchen but I couldn’t think of any recipe for my 2 beautiful sea breams 🙁 Then the boyfriend suggested Chinese food instead of fish!!! Noooo… I want fish 🙂 So why not add both things together? So I started looking around the web for some ideas… and I found this recipe for baked sea bream with ginger, soy and spring onions on the Telegraph website. Sounded good enough to try 🙂

Ginger, soy and spring onions are very common ingredients in the Chinese cuisine being used a lot in stir fries. But I never though of using them with sea bream in the oven. The original recipe used sea bream fillets but I like to cook my fish whole as I think that it keeps the flavour better. Also, it was meant to be served with a side of salad. But we love potatoes… so lets add some potatoes to the recipe and see what happens.
I’m quite happy the way the recipe turned out. I must admit, I wasn’t very sure in the beginning. It sounded good on paper but I had my reservations. I’m used to more traditional flavours with my fish so I was curious to see the result… and I wasn’t disappointed. It’s different and I did like it.
Baked sea bream with ginger, soy and spring onions
Ingredients
- 2 small whole sea breams, gutted and scaled
- 2 cm piece fresh ginger, grated
- 5 spring onions, chopped
- 50 ml soy sauce
- Olive oil, as needed
- 6 medium potatoes, with skin on
- 1 lemon cut into small pieces
Instructions
- Preheat the oven - 180C
- Start by washing the fish in running water. Pat dry with kitchen paper and season with soy sauce, ginger and spring onions. Marinate for about half an hour.
- Meanwhile, bake the potatoes with the skin for about 10/15 min. They shall not bake completely because they will go to the oven with the fish.
- Remove the potatoes from the pan and let it cool down a bit. With your fist, give a small punch in each potato in order to break them up a bit. Set aside.
- In a baking tray, put a little olive oil enough to cover the bottom.
- Place both fish on the tray, and place the potatoes around it.
- Drizzle with the fish marinade and scatter the pieces of lemon on top.
- Bake for about 20 min or until the fish is cooked.

Looks delicious and I’m going to try it tonight. However the recipe is a bit vague. It doesn’t state specifically which ingredients make up the marinade. Where does the onion and ginger go, over the fish or in the fish? I’ll improvise but a little more specific detail would be helpful.
