I don’t know about you but when I saw this recipe for Baileys cake I thought straight away that I had to try it π I’ve seen cakes with all sorts of alcoholic drinks but never with Baileys. But imagine how nice it must be to have the flavour of Baileys cream in a nice and soft cake? Yes, the idea seems good to me…
Baileys cake
Although I like Baileys, it’s not the sort of drink that I would have at home. But, last time my boyfriend’s sister came for dinner, she brought us a nice bottle of this liqueur. So when I decided to bake, the recipe for Baileys cake came to my mind… and I had just the right amount that the recipe asked for!
So I gave it a go… and it was a success π The cake was firm but soft at the same time… and you could really feel the taste of Baileys. This made it perfect for my boyfriend as he loves a nice piece of cake with his coffee… Another successful baking experiment…
Baileys Cake
Ingredients
- 375 g flour "00"
- 250 g butter
- 250 g sugar
- 4 eggs
- 200 ml Baileys
- 3 tbsp baking powder
- 1 pinch of salt
Instructions
- Preheat the oven - 180C
- Cut the butter into pieces and soften on a water-bath.
- Beat the butter with the sugar until you get a soft cream.
- Add the eggs, one at a time, beating constantly.
- Sift the flour with the baking powder and salt.
- Add the flour to the butter cream and stir well.
- Add the baileys and stir well again to combine the ingredients.
- Grease a loaf tin with butter and sprinkle with flour.
- Pour the batter into the tin. Lightly tap the form on the kitchen counter top to level the batter and remove any air bubbles that may have formed inside the dough.
- Bake for 40 min.
- Before removing from the oven, insert a toothpick into the center of the cake. If the cake is ready, it should come out clean, with no streaks of batter. A few small crumbs are ok! .

Wow!! Did the cake . So soft and lovely. One questions. Is it normal to get streaks like marbled effect of what looks like creamy studd. At first I was worried that the cake wasn t baked right. But the taste it lovely and the outside is all nice and crusty with a soft inside. Even when i checked it to see if it is baked the stick came out dry.

Hi there π thank you for trying the recipe and I’m glad you liked it… when I did it there were no marbled effect but I would guess it’s because of the baileys cream… I would say you mix the ingredients very well before baking and “bang” the cake tin against the kitchen counter before putting it in the oven. This will level the dough and remove the air bubbles that may have created the marbled marks. I can’t think of another reason. But if it came out firm on the outside and soft in the inside, then you got it right. And if the taste was good, even better π thank you for sharing your experience π
