I cook chicken a lot as I try to avoid red meat as much as possible. And although there’s so many different ways to cook chicken, sometimes I struggle to find new ideas. Thank God for all the recipe books and the internet 🙂 but there are days when I keep finding the same recipes everywhere, or I don’t fancy anything I find. Maybe I’m being fussy but that’s what happens to me. Don’t you have days like this?
So sometimes the best is to stick with a winning recipe that you know it will always work and everyone will love. That the case of this roasted lemon chicken. It’s a recipe that I’ve seen my mum cooking all my life. And we have a funny name for it: “Gay Chicken” 🙂 the explanation I leave it to your imagination 🙂 For a cook like my mum that doesn’t like to spend time in the kitchen, this is the perfect recipe. Usually I marinate it the night before and keep it in the fridge. Then in the morning (because I usually cook it on Sundays), all I have to do is take it out of the fridge, turn on the oven and meanwhile prepare the tray with the chicken and potatoes. And off it goes to cook while I take care of my morning routines. Before you know it, lunch is ready 🙂
