Meatloaf stuffed with ham and cheese

Today I decided to share with you my meatloaf stuffed with ham and cheese. For me it’s quite an easy way to put dinner on the table without spending too much time in the kitchen. Mainly because the oven does all the work 🙂 The meat mixture can be as simple or complex as you want. Basically, you can use just simple minced beef seasoned to taste and stuff it, or you can mix other ingredients as you please and even change the stuffing. It’s a dish where you can just change the ingredients and make your own work of art 🙂

I found out that, although it’s a very popular dish in America, meatloaf has European origins that back as far as the 5th century! Nowadays it’s a traditional dish in Germany, Scandinavia and Belgium. But each country has it’s own ingredients with the common base being the minced meat that is stuffed, shaped into a loaf and baked. For example: the Germans stuffed it with hard boiled eggs, in Scandinavia it’s not stuffed but different ingredients are added to the minced beef mixture and in Belgium is served cold.

During the Great Wars or the Great Depression, this was an even more popular dish as you could stretch it a long way using cheaper meats and any available ingredients. If we think about it, even today, we can say that this dish is a cheaper way to put dinner on the table particularly if you are cooking for guests. Definitely cheaper than buying a piece of beef to roast and you can put so much flavour into it.

My meatloaf is the Italian version usually called “Polpettone“. I’ve tried other stuffing but ham and mozzarella are still the wining one for us 🙂

Meatload stuffed with ham and cheese

Prep Time: 30 minutes

Cook Time: 50 minutes

Total Time: 1 hour, 20 minutes

Yield: 4/6 people

Ingredients

500g minced beef
300g minced pork
50g chorizo (skinless) minced
40g bacon, chopped
1/2 onion, finely chopped
1 clove garlic, minced
1 bunch parsley, finely chopped
1 egg
3 tbsp grated bread
100g sliced ​​ham
100g sliced ​​mozzarella
1 onion, sliced
50ml white wine
Salt and pepper, to taste
Olive oil, needed
Cling film
aluminum foil

Instructions

Preheat oven - 200C
In a bowl, add the minced meats, bacon, chorizo, chopped onion, garlic, parsley and egg.
Season with salt and pepper.
Mix well with your hands. Add the grated bread and mix again.
In the kitchen counter, spread about 50cm cling film.
Place the meat mixture on top of the cling film and spread over the entire surface.
Roll out another piece of cling film over the meat.
With the help of a rolling pin,roll out the meat till it reaches a thickness of about 1cm.
Remove the top piece of cling film. Place the slices of ham and mozzarella all over the meat.
With the help of the cling film begin to roll the meat squeezing it tight to form a roll.
Close the ends of the roll and set aside.
In a baking tray, place the onion slices, drizzle with olive oil and put the meatloaf on top of it.
Pour in the white wine and season with salt and pepper.
Cover with aluminum foil and bake for 40 mins.
When the time is finished, remove the aluminum foil and return to the oven for another 10 mins to brown.
Serve sliced with a green salad
